I wish

I wish I could view the weekend as a time to relax and “chill,” as Geo would put it. I wish I could embrace it as a time to do things for myself, as my lovely husband recommended earlier today; in fact, to be specific, he said I should go get my nails done and act like a “normal” person. I scoffed and rolled my eyes while already hours into my project for the day: painting the trim in our stairwell/hallways.

But now, as I’m laying in bed and George is in downstairs playing video games, I’m contemplating whether or not I should work on some thank you notes and/or dig into filling out holiday cards. Yes, holiday cards… and it’s got me thinking – am I crazy? It’s 9:30 at night. I’ve baked muffins, cleaned outdoor furniture, helped Geo put that furniture away, made us lunch, worked on laundry, spent hours prepping and then painting trim (which always sucks), dabbled in sorting things out in the nursery, emptied the dishwasher, and if I thought about it I’m sure I could think of more. Yet, I’m in bed considering doing even more. And it’s Saturday.

Tomorrow I will take Geo’s advice and do my best to act like a “normal” person, but tonight I’ll work on those cards and maybe ever work on this week’s to-do list… I am who I am!! 🙂

Confession to My Husband

Dear Geo,

This morning, after making your lunch, enjoying breakfast with you and driving you to the train station, rather than starting my day like I normally do I got home, went upstairs and got back into bed.

If it’s any consolation, the bed wasn’t nearly as warm and cozy without you… but gosh, it sure felt nice to do it.

PS. When your midwife suggests Kimchi on toast with sliced avocado and you react as though she recommended roadkill with a side of poop BUT then you try it and LOVE it. That’s what happened to me tonight. YUM. Oh and adding a slice of cheddar and some hummus is never a bad idea 🙂    

  

Are We “Glowing” Yet?!

I’ve been introducing more vegan styled meals into our diet not because I want to necessarily go full-blown vegan (I’m too in love with ice cream!) but because we just don’t eat enough veggies, grains and/or fruits. I figure that having some solid, all natural recipes up my sleeve will help solve this problems and so far it’s been super easy to do because of the cookbook Oh She Glows by Angela Liddon. What’s great about vegan meals is that many of the snacks, dessert, breakfast recipes use the same products but in different ways. You have to build up a supply of the more random items, for me they were: brown rice flour, agave nectar, chia seeds, ground flax seeds and things along those lines. Once you have those ingredients it’s very simple to whip up something like, Chia Seed Doughnuts that were really good – even Geo thought so, and he can be a tough audience!

Chia seeds, oat flour, baking powder, salt, cinnamon, vanilla extract, maple syrup and soy milk. It literally takes 5 minutes to prepare and then you stick them in the oven.

Or a Green Monster Smoothie, which is how we’ve been starting our mornings the past couple days.

One frozen banana, kale, peanut butter, soy milk, 2 ice cubes, vanilla extract and flax seeds. DELISH.

I’ve also made a number of her dinner meals and desserts, the avocado cream pasta is one of my faves! Off to make a batch of doughnuts for my MIL 🙂

A Love Letter (Sort Of).

Dear Geo,

Before I say anything else, let me just list out a few of the reasons why I love you.

1. For finding and bringing home a dirty glass bottle because you knew I’d like it.
2. For going to Boston Market and knowing that their corn is my favorite.
3. For being open to a, let’s pack up our bags and move, adventure.
4. For agreeing to a pricey wedding band because I love them.
5. For loving ice cream as much as me.

These are just a few reasons why I’m so excited to marry you.

But something I don’t love and I’m not sure I’ll ever understand is this:

It’s a good thing you’re so cute.

Grocery Shopping: The Good, the Bad and the Ugly!

After having dinner with some girlfriends last week I was reminded that what we put in our bodies is important and learning about food matters. I mean, will I ever get my fiancee to eat organic, natural popcorn with nothing but a little bit of pepper on it? Or grow an abundance of vegetables, cook dozens of meals, and freeze them to eat throughout the winter?  Probably not (Aly, you and Pete are the type of people we aspire to be!) but there’s no reason why I shouldn’t be aware that packaged shredded cheese has saw dust in it. YES. Saw dust. Gross. Apparently the saw dust acts as a preservative (FYI it’s a very small amount, but still!). Needless to say, we’ll be shredding our own cheese from here on out, hence the Cabot cheddar cheese block visible center of cart.

Okay, so I think a good starting point is to take a look and see what I like and don’t like about this past grocery shopping trip…

Do Like:
– Starbucks coffee 😀 That has nothing to do with my selected groceries but I just love a good Starbucks coffee, especially when it has a pump or two of pumpkin syrup!
– I like the Fiber One bread. A slice is 50 calories, it’s multigrain and it’s the perfect size for a lunch time sandwich.
– Hard to see but there’s a bag of ginger snaps in there (left hand side, next to popcorn). I like my sweets and ginger snappers seem to be a semi healthy way to get a quick fix.
– Everything in the back of the cart: Bananas, Seltzer, eggs, Yogi Tea, lettuce, etc.

Don’t Like:
– I take that back. The back of the cart items would be perfect if it weren’t for those two Celeste frozen pizzas… $1.50 each, it was a bargain! Can you blame me for grabbing them?
– Ice cream. Coconut ice cream for that matter – who buys that crap? Oh, we do. And then add jimmies.

I could stop there but I should confess there’s one other item in this cart that is a big no-no. You can’t see it in this pic but it’s there and it’s UGLY. Any guesses?

FLUFF. And not the small size of fluff, the big one. I mean, what’s the point of getting healthy bread if you’re going to spread FLUFF on top?! On the flip-side, who doesn’t love a good fluff’nutter every once and a while… 😀

Eat clean food. This is going to be our new family mantra. Wish us luck!
